chickpea curry

this is my newest recipe i guess its a fusion of morrocan,indian and asian...whatever it is it will satisfy your curry craving....enjoy......



2 T E.V.olive oil
4 garlic cloves minced roughly
3-4 T red curry paste (panang) can be found at asian market
2 cans organic garbanzo beans (chickpeas)
1 1/2 cups of tomato juice (like V-8 etc)
6-8 slices of eggplant or frozen breaded eggplant cutlets (got mine at trader joes)
1/2 C frozen peppers (red,yellow,orange)
1 bag of spinach
handful of golden raisins
1 T honey or agave nectar
1 T cumin
black pepper

oil first,then garlic,spinach last.


serve over quinoa or cous cous or fav grain
coconut milk can be added if you wish.


this is on the spicy curry side.
