Pan fried romaine burritos


Yes, really.
This is my new food love. I give credit to the restaurant in charlotte (actually the Arboretum shopping center) called New South. My friend's mom ordered the grilled romaine salad and we all thought "wtf" but it turned out to be so memorable for a lot of us, that we have replicated the recipe at home. 
       It has a homemade caesar dressing with anchovies melted into the oil and everything. The lettuce itself is slightly charred and tasted as if it was rolled around  in a steak that was just grilled. Mere words cannot describe. I will have to post the recipe...which reminds me, Soul restaurant also has a version of the grilled romaine salad also. It's executed a little differently where they don't chop up the romaine head for you they just serve the whole thing slightly charred as well.It is also excellent.
   Well the recipe below is an idea that occurred to me because of the grilled romaine salad.
Romaine is really quite tasty warmed, i promise you'll be surprised...


Romaine burritos



Ingredients:
head of romaine lettuce slice off about three inches off the bottom above the core
Fresh tomatoes diced (might i recommend cherry if they aren't in season)
1 can of refried beans
finely shredded mexican mix cheese 
sliced avocado
sour cream


assembly:
take 1 lettuce leaf, 
put cheese in first,
then tomatoes,
put refried beans next,
roll overlapping leaves over refried beans,
put in a buttered, heated skillet
one side just until wilted,then the other side
you really just wanna melt the cheese.
top with avocado slice and sour cream




Feel free to add or take away ingredients as these were what i had on hand. 
This recipe is gluten free and vegetarian if your beans don't contain lard.
Leave out the dairy and it's then vegan.
