stuffed red peppers w/quinoa

STUFFED RED PEPPERS W/quinoa
step 1:
cook 1 cup of quinoa according to package directions. 
instead of water i use vegetable broth 
add capers about 1-2 tablespoons
set aside and let cool.
preheat oven to 400
step 2:
in a skillet add 3T olive oil or grapeseed oil in pan
mince 3 shallots and 3 garlic cloves let brown a little
1 lb ground turkey 
(let turkey brown)
*You can also Omit the meat and use chopped up mushrooms instead!
then add
1/4 C shredded red cabbage (optional)
1 pkg chopped mushrooms your choice
leftover tops from red peppers used for stuffing (chopped)
1 can of water chestnuts
1 med zuchini diced
add veg broth 
saute for 5 mins
step 3:
in a big bowl combine quinoa and cooked turkey together
then stuff about 6 red peppers 
bake uncovered in oven for 20-30 mins until peppers soften

surprise! they are really freakin good.
these are great for lunch the day after as well.
