food this week


This is what I made for dinner tonight.It's from matthew kenneys living food book (everyday raw,pg 83) 

seaweed salad!! 

2     C mixed greens
1/2 C  dried wakame in 1inch pieces (soaked 20-30 mins and drained)
1/2 C  julienned green mango 
1/2 C  julienned cucumber
1/2  C julienned beets?(up to you)
SEA SALT
*I added avocado and carrots omitted the beets,just because thats what i had on hand.


1/4 C  dressing ..... 
Ginger Miso:
1/2 C white miso
1/3 C agave nectar
1/3 C apple cider vinegar
1/4 C sesame oil 
1/4 C lemon juice 
1 1/4 C fresh chopped ginger

blend all ginger miso ingredients in a vitamix or a high speed blender until completely smooth

assembly of seaweed salad:

place 1 C mixed greens in center of each plate.
mix seaweed with julienned vegetables in medium bowl add salt to taste.place sea veg mix on top of greens.
just before serving,drizzle generous amounts of dressing and sprinkle with sesame seeds and scallions.

serves 2



This is soooo good.Especially the dressing....i would make copious amounts of it were I you:)
you can use the dressing for many other things throughout the week.
