food this week- indian spinach dip


this is taken from alissa cohens book living on live food. which i might add would be hella better if there were pictures illustrating the recipes. i guess i am a visual person,where i need a picture to be fully inspired to make something...
i made this tonight....i halfed the recipe because i am the only one who will be eating this...i may have added more lemon,curry and more herbamare than it called for....its basically guacamole with spinach and curry added.

Inspired by palak paneer, an Indian spinach curry, this dip turns veggie sticks (have as many as you like) into something special. 

 

Ingredients

Serves 4 (makes about 2 cups)

  • 4 cups spinach (about 6 to 7 oz.)
  • 1 large avocado
  • 1/2 Tbs. lemon juice
  • 1/2 tsp. low-sodium seasoned salt (such as Herbamare)
  • 1 small clove garlic, peeled
  • 1/4 tsp. curry powder
  • 1/8 tsp. minced fresh ginger
  • Dash chili powder
  • Dash cayenne pepper
  • Dash cumin

Directions

  1. Blend all ingredients in food processor until smooth, and serve.
